Creamy Porcini Mushroom Ragout with Polenta

Fresh mushroom and dried porcini ragout with thyme and cream, served over crisp-fried set polenta. The porcini provide both rehydrated solids and a strained aromatic liquor; chilling fully cooked polenta gives clean edges for frying.
