- Scaling
- 250.00%
Method
- Rub the chicken with the salt, then rinse it clean.
- Bring the water, ginger, and spring onion to a boil.
- Lower the chicken breast-side down, return the liquid to a boil, then reduce it to a bare simmer.
- Simmer for 30–35 min, turn off the heat, and rest the chicken in the liquid for 15 min.
- Transfer the chicken to an ice bath for 5 min and reserve the poaching liquid.
Technique Applications
| Technique | Controls | Purpose |
|---|---|---|
| Poaching | Bare simmer; 30–35 min, then 15 min off heat | Cook the chicken gently while producing stock. |
| Ice-bath shocking | Ice water; 5 min | Stop carryover cooking and set the skin. |
Principles
- Collagen extraction — Gentle heat enriches the poaching liquid without aggressively tightening the meat.
- Thermal shock for skin texture — Immediate chilling firms the chicken skin.
Phase Outputs
| Key | Phase Output | Description |

- Add the rice and coat it in the aromatic fat.
- Add 300 ml of chicken stock and 3 g of the salt from Phase A, then cook covered by the standard absorption method.
- Rest the rice for 10 min and fluff it gently.
Technique Applications
| Technique | Controls | Purpose |
|---|---|---|
| Fat-toasted rice | Gentle heat; no browning | Coat each grain with aromatic fat before stock is added. |
Principles
- Aromatic fat infusion — The warm fat carries ginger and garlic aroma through the rice.
- Starch absorption — Measured stock hydrates and gelatinises the rice during covered cooking.

FAILURE MODES
| Symptom | Likely cause | Corrective action |
|---|---|---|
| Flabby chicken skin | The ice bath was skipped or too brief. | Submerge the chicken fully in ice water for 5 min immediately after poaching. |
| Dry, stringy chicken | The liquid boiled too aggressively or too long. | Hold a bare simmer, then rest the chicken off heat. |
| Greasy, clumpy rice | Too much fat was used or the aromatics browned. | Use 2.00% fat and warm the aromatics gently without colouring them. |
| Raw, harsh ginger sauce | The oil was too cool. | Heat the oil until shimmering before pouring it over the ginger. |
