- Yield
- 2 portions
February 19, 2026 · Version 1 · Side Dish
High-protein campfire-style beans with molasses, beer, browned beef, and a slow reduction. Pinto beans give a creamier interior; navy beans give a tighter texture. The flavour integrates further during an extended hold and is often best on day two.

Method
- Render the bacon in a heavy ovenproof pot over medium heat until its fat releases and the edges crisp.
- Add the beef and brown thoroughly to develop deep fond; do not rush this step.
Technique Applications
| Technique | Controls | Purpose |
|---|---|---|
| Fond development | Medium heat to render bacon, then thorough beef browning | Build a deeply caramelised pot base. |
Principles
- Maillard reaction — Well-browned beef creates depth in the finished sauce.

Technique Applications
| Technique | Controls | Purpose |
|---|---|---|
| Spice blooming | Stir spices in bacon fat for 30–60 s | Release fat-carried spice aromas without scorching. |
Principles
- Fat as flavour carrier — Rendered fat distributes the warm spices through the beans.

Method
- Add molasses, sugar, tomato sauce or crushed tomato, mustard, vinegar, and optional Worcestershire; stir until glossy.

Principles
- Molasses bitterness balance — Vinegar counters excess sweetness while leaving molasses depth.
Phase Outputs Used
| Phase Output | Use |
|---|---|
| Cooked beans | Add all of cooked-beans and enough of its reserved liquid to cover. |
Phase Outputs
| Key | Phase Output | Description |
|---|---|---|
| assembled-beans | Assembled bean pot | Beans in molasses-beer sauce, ready for slow reduction. |
PHASE E — REDUCE AND REST
Method
- Bake uncovered at 170 C for 2–3 h, or simmer gently on the stovetop, stirring occasionally.
- Add reserved bean liquid as needed to prevent scorching, keeping the sauce thick rather than soupy.
- When spoon-coating, rest for 15–20 min before serving.
Technique Applications
| Technique | Controls | Purpose |
|---|---|---|
| Reduction | Uncovered at 170 C for 2–3 h, or gently on the stovetop | Concentrate the sauce until it coats a spoon. |
Principles
- Starch gelatinisation — Resting lets the thickened bean sauce stabilise.
Phase Outputs Used
| Phase Output | Use |
|---|---|
| Assembled bean pot | Reduce and rest all of assembled-beans. |
FAILURE MODES
| Symptom | Likely cause | Corrective action |
|---|---|---|
| Beans lose their structure | They soaked or simmered too long before baking. | Part-cook only until just tender; the final reduction finishes them. |
| Sauce is watery | Too much liquid or too short a bake. | Start with liquid just covering the beans and continue uncovered reduction. |
| Bottom scorches | Heat was too high or the long bake was not stirred. | Use a heavy pot at 160–170 C and stir every 30–45 min. |
| Flavour is flat | Beef fond or spice bloom was skipped. | Brown beef deeply and bloom the spices in fat. |
VARIATIONS
- Campfire: Replace half the beer with strong coffee.
- Smokier: Add 5 g chipotle powder or one diced canned chipotle.
- Lean Ranch: Omit beef and increase bacon to 300 g.
- Brisket leftovers: Replace the beef with 300 g chopped smoked brisket.
