Purpose
Bring dried beans to a just-tender state before they enter a sweet and acidic sauce.
Controls
Cowboy Beans covers 112.5 g dried beans with about three times their volume of water, soaks 8–12 h, then simmers in fresh water for 30–45 min. Tenderness is the endpoint.
Process
- Cover dried beans with cold water and soak.
- Drain, add fresh water, and simmer until just tender.
- Drain while reserving bean liquid for the later sauce.
Failure Modes
| Symptom | Likely cause | Corrective action |
|---|---|---|
| Hard beans in finished sauce | Beans were underhydrated before the sauce stage | Continue the plain-water simmer until just tender before combining. |
