Method
- Combine beans, water, onion, garlic, bay leaf, cumin, oregano, salt, and oil in a pressure cooker.
- Cook at high pressure for 35 min.
- Allow pressure to release naturally for 20 min, then release any remaining pressure.
Technique Applications
| Technique | Controls | Purpose |
|---|---|---|
| Pressure cooking | High pressure 35 min; natural release 20 min | Cook dry beans before reducing the liquor. |
Phase Outputs
| Key | Phase Output | Description |
|---|---|---|
| cooked-beans-with-liquor | Cooked beans with liquor | Prepared intermediate for a later Phase. Use all; approximately 900 g is the recorded finished-weight estimate. |

Method
- Discard onion and bay leaf. Simmer uncovered for 10 min–20 min until the liquor lightly coats the beans.
- Stir in lime juice and coriander. Adjust salt.
- For taco service, crush approximately 20% of the beans into the liquor to make the mixture cohesive.
Bean age changes pressure-cooking time substantially; add 5 min–10 min if the beans remain chalky. Reconstructed as an unsoaked method. Do not fill the pressure cooker above half capacity when cooking dried beans.
Recorded alternatives (no separate variation-specific testing observations were supplied):
- Smoky: Add 10 g minced chipotle in adobo before pressure cooking.
- Refried texture: Mash 500 g finished beans in 30 g hot oil until thick and spreadable.
Phase Outputs Used
| Phase Output | Use |
|---|---|
| Cooked beans with liquor | Use cooked-beans-with-liquor. Use all; approximately 900 g is the recorded finished-weight estimate. |
FAILURE MODES
| Symptom | Likely cause | Corrective action |
|---|---|---|
| Chalky beans | old beans or insufficient cooking | extend pressure cooking as recorded |
| Runny finish | insufficient reduction | simmer until liquor coats beans |
