Manchego with Thyme-Infused Honey & Coffee Dust

Yield
2 portions

February 19, 2026 · Version 1 · Appetizer

Sweet–bitter contrast plate. Best served at 18–20 C (cool room temperature).

Preparation

Scaling basis: Manchego · 100 g

PHASE A — CHEESE PREPARATION

Ingredient Uses

Method

  1. Remove Manchego from refrigeration 45–60 min before serving.
  2. Slice into 5–7 mm wedges or thick shards. Arrange on a neutral plate.

Phase Outputs

Key Phase Output Description
prepared-manchego Prepared Manchego Tempered, sliced cheese.

Aged Manchego (12+ months) is essential to the source profile: young cheese lacks the crystalline texture and concentrated flavour to stand up to the bitterness.

PHASE B — THYME HONEY

May overlap: PHASE A — CHEESE PREPARATION while the cheese tempers.

Ingredient Uses

Method

  1. Warm honey gently to 40–45 C (just fluid, not hot).
  2. Stir in thyme leaves and allow to infuse 10–15 min.
  3. Strain or leave leaves in for a rustic finish.
  4. Aim for aromatic lift without cooked-herb bitterness; keep honey at 40–45 C and avoid exceeding 50 C.

Technique Applications

Technique Controls Purpose
Infusion 40–45 C; 10–15 min Transfer thyme aroma into warm honey.

Principles

  • Aromatic infusion — Gentle honey warming carries thyme aroma without the source cooked-herb bitterness.

Phase Outputs

Key Phase Output Description
thyme-honey Thyme honey Warm thyme-infused honey, strained or left rustic.

PHASE C — COFFEE DUST

May overlap: PHASE B — THYME HONEY during infusion.

Ingredient Uses

Method

  1. Grind coffee beans very fine, almost powder.
  2. Sift through a fine sieve to remove coarse particles.
  3. Use sparingly — think seasoning, not crust.
  4. Optionally bloom the coffee powder in a dry pan for 20 s, as the source refinement suggests, to soften acidity.

Technique Applications

Technique Controls Purpose
Fine grinding Very fine coffee powder Prepare a restrained seasoning.
Sifting Fine sieve; remove coarse particles Avoid concentrated bitter hits.

Phase Outputs

Key Phase Output Description
coffee-dust Coffee dust Fine sifted coffee powder.

Medium roast works better than dark in this plate. Coffee should register as roast complexity rather than a dominant coffee flavour; the source records no measured flavour threshold.

PHASE D — FINISH AND ASSEMBLY

Ingredient Uses

  • Sea salt

Optional tiny flake to sharpen contrast.

Method

  1. Drizzle warm thyme honey lightly over or beside the cheese.
  2. Dust with a restrained pinch of coffee powder.
  3. Serve immediately.

Principles

Phase Outputs Used

Phase Output Use
Prepared Manchego Use all of prepared-manchego from PHASE A as directed above.
Thyme honey Drizzle thyme-honey lightly over or beside the cheese.
Coffee dust Use only a restrained pinch of coffee-dust.

FAILURE MODES

Symptom Likely cause Corrective action
Coffee flavour dominates the plate. Excessive coffee dust or grind too coarse (larger particles deliver more concentrated hits). Reduce to a bare pinch; sift more aggressively to remove coarse particles.
Honey tastes flat or cloying. Honey not warm enough to volatilise thyme aromatics, or infusion time too short. Warm to 40–45 C and infuse a full 15 min. Use wildflower or thyme-origin honey for better baseline complexity.
Cheese tastes rubbery and muted. Served too cold — fat crystallisation suppresses flavour release and texture. Ensure full 45–60 min tempering at room temperature before serving.

OPTIONAL REFINEMENTS

  • Add a tiny flake of sea salt to sharpen contrast.
  • The optional 20 s coffee-powder pan refinement is preserved in PHASE C.
  • Serve a dry fino sherry alongside if desired.
