Purpose

Release culinary fat from pork or other fatty ingredients so it can carry flavour, lubricate the finished dish, or leave the solids crisp.

Controls

Use moderate heat and sufficient time for the fat to melt before the solids scorch. Adjust agitation and added liquid to preserve the intended texture.

Process

  1. Heat the fatty ingredient gradually until rendered fat collects in the pan.
  2. Continue only until the solids reach the intended tenderness or crispness.
  3. Use the rendered fat in the next preparation step or retain it as directed.

Failure Modes

Symptom Likely cause Corrective action
Bitter or scorched solids Heat was too high before fat released. Lower the heat and render gradually.
Greasy finished dish More rendered fat was retained than the dish requires. Drain or reserve excess fat before finishing.
