Primary subject: recipe/tamarind-chutney v1

Hypothesis

Retrospective review expectation stated at recording time: the complete recorded formulation and Method can reach its intended endpoints and produce the following finished dish: Glossy sweet-sour tamarind sauce with date, jaggery, and warm spice. This is not a hypothesis documented before historical cooking and is not itself an observed outcome.

Procedure

This record was written on 2026-10-02 from Carlo Kruger’s retrospective report on that date. Historical cooking dates and trial counts were not recorded. The exact whole Recipe Version is Tamarind Chutney v1. Its preserved source is recipes-tmp/tamarind-chutney.md with SHA-256 e5e7dc18c3703ff03bd6deb29f35cd1f7a6a350999d834773117e52f9dafba87. The serialized draft SHA-256 is 829f5061a5db8a6bb4636a8bea9b6af95846eb0f1ffdbe87e9de35fcbdcd5b99. The complete formulation and work sequence below are the recorded specification, not newly observed timings, temperatures or yields. Correspondence to past cooking is attributed to Carlo’s statement that the recipes as recorded were fully tested. The historical reconstruction caveats remain in the unchanged source; Carlo’s 2026-10-02 acceptance applies to this formulation and the packet’s explicit clarifications.

PHASE A — SIMMER

Ingredient Uses

Key Ingredient Quantity Scaling Use
tamarind-concentrate Tamarind concentrate 100 g 100.00% Tamarind concentrate.
water Water 350 g 350.00% Water.
pitted-dates-chopped Pitted dates, chopped 150 g 150.00% Pitted dates, chopped.
jaggery-or-dark-brown-sugar Jaggery or dark brown sugar 100 g 100.00% Jaggery or dark brown sugar.
ground-cumin-toasted Ground cumin, toasted 5 g 5.00% Ground cumin, toasted.
ground-ginger Ground ginger 2 g 2.00% Ground ginger.
kashmiri-chilli-powder Kashmiri chilli powder 2 g 2.00% Kashmiri chilli powder.
fine-salt Fine salt 5 g 5.00% Fine salt.

Method

  1. Combine tamarind concentrate, water, dates, jaggery, cumin, ginger, chilli, and salt.
  2. Simmer gently for 20 min–25 min until the dates are soft and the mixture is lightly syrupy.
  3. Retain the recorded Jaggery or dark brown sugar option; the alternative uses the same declared quantity, in place of the first material.

Phase Outputs

Key Phase Output Description
softened-date-mixture Softened date mixture Prepared intermediate for a later Phase. Blend and strain all.

PHASE B — BLEND AND STRAIN

Ingredient Uses

Key Ingredient Quantity Scaling Use
garam-masala Garam masala 2 g 2.00% Garam masala.

Method

  1. Blend until smooth.
  2. Pass through a fine sieve, pressing firmly on the solids.
  3. Return to the heat and simmer to a pourable chutney consistency.
  4. Stir in garam masala, cool rapidly, and refrigerate.

Commercial tamarind concentrates vary sharply in strength and acidity. The chutney thickens as it cools. Stop the reduction while it is slightly looser than the target texture.

Phase Outputs Used

Phase Output Use
Softened date mixture Use softened-date-mixture. Blend and strain all.

Results

Carlo retrospectively reported that the recipes as recorded were all successful and fully tested, and approved this whole formulation for production. No further Recipe-specific observations were supplied. Cooking dates, trial counts, detailed tasting notes and instrument measurements were not supplied. Source yields are estimates, not measured results of this retrospective record. Recorded alternatives have no separate variation-specific testing observations in this report.

Decision

Carlo accepted the formulation as recorded, including the explicit reviewed clarifications, for production in the complete 25-Recipe batch on 2026-10-02. Proceed to normal exact-version Promotion after valid serialization, applicable Curation and reference resolution. Technical validation does not perform that human acceptance. A materially changed formulation needs its own exact-version evidence and acceptance; this report does not automatically follow future changes.
