Glazing

Purpose

Coat rested chicken with warm glossy sauce.

Controls

Brush warm sauce on once, or coat over low heat for 2–3 min; serve extra sauce separately.

Process

1. Prepare and rest the chicken, warm the sauce, then brush or coat immediately before service.

Failure Modes
