Purpose
Turn a cooled, aged base into scoopable ice cream before packing and hardening.
Controls
The recorded bases age below 4 C for 6 h–12 h; follow the machine instructions and use approximately -6 C as the source draw target, not a historical measured result. Inclusions and ripple remain Recipe-specific.
Process
- Cool and age the complete base as recorded; prepare and chill any inclusions separately.
- Churn according to machine instructions to the specified draw endpoint.
- Add the selected inclusion portion or layer the cold ripple as recorded, pack and harden at -18 C for at least 4 h.
Failure Modes
| Symptom | Likely cause | Corrective action |
|---|---|---|
| Inclusions uneven or ripple disappears | Added too early or overmixed | Add pecans in the final 30 s, or layer cold ripple and fold only once as specified. |
