Purpose

Create selected darkened areas with very high heat for bitter-sweet roasted flavour while preserving the ingredient’s structure.

Controls

Control distance from heat, turning frequency, and the proportion of char so darkening remains intentional.

Process

  1. Expose dry surfaces to intense heat, turn as blistering develops, and remove once the desired char is reached.

Failure Modes

Symptom Likely cause Corrective action
Acrid bitterness Too much of the surface burned. Use higher heat for less time and turn before the char spreads.
